Trader Joe’s in Tustin, CA is currently promoting their gluten free buttermilk pancake & waffle mix. My wife loves blueberry pancakes so I figured I could make pancakes and help promote the Trader Joe’s featured product at the same time. Here is what you will need from Trader Joe’s:
Ingredients for the Blueberry Pancakes
- Gluten Free Buttermilk Pancake & Waffle Mix
- Grade A maple syrup (organic if possible)
- Fresh blueberries (1 – 2 cups)
- 1 Egg
- 1/4 Cup + 2 Tbsp of water
- 2 Tbsp of butter (melted)
Ingredients for the Blueberry Yogurt Parfait
- 1/2 tub of yogurt
- 1/3 cup of your favorite granola
- Some honey
You will also need an orange, or any other type of fruit you want to serve with this dish.
Instructions:
Just follow the instructions on the box:
Take one egg, the water and the melted butter and mix them all together using a whisk.
This process is important because you are building an emulsion using the egg, which will allow the water and the butter to blend together without separating.
Next, remove the whisk and use a spatula to add in the pancake mix and gently stir together until the batter is smooth and consistent. Try to stir as little as possible to avoid the batter from becoming over worked, that would result in a tough pancake instead of a light and fluffy one.
Once the batter is done, add in two handfuls of fresh blueberries. At this time, preheat a non-stick pan or skillet to 350 degrees (aka medium heat). Spray the pan with some cooking spray or use cooking oil and a paper towel to lightly coat the pan. You can add a little butter if you want better flavor.
Use a large ice cream scoop or a 1/3 cup to add your batter to a preheats non-stick pan or skillet. Cook each side of the pancake for 1 1/2 to 2 minutes.
Use a spatula to carefully flip the pancakes. Once you are done, remove them and serve them immediately. I recommend serving it with a simple yogurt parfait with some organic whole milk yogurt, granola, fresh blueberries and some honey. If plain yogurt is too tart for you then use vanilla yogurt instead. Serve with some grade A maple syrup and enjoy your Trader Joe’s Gluten Free Blueberry Pancakes!
