Every Wednesday night in Orange County there is a food truck night at the OC fair grounds. I don’t go every week but when I do go I always see a long line for The Grilled Cheese Truck. Normally the line is super long but I finally got the chance to try them out without having to wait forever. My wife and I tried their Pepperbelly Melt as well as their Cheesy Mac and Rib. I was skeptical at first at how good a grilled cheese sandwich could be but after one bite I was sold on why their line is always so long. Below is a picture of the Pepperbelly Melt, which has a great balance of heat from the jalapenos, saltiness from the fritos chips and a hint of sweetness from the buttery bread.
If you are not into spicy food at all then I would recommend trying the Cheesy Mac and Rib, it is literally a grilled cheese sandwich stuffed with BBQ pulled pork and Mac & Cheese. So this sandwich is more on the sweet side but it still holds a mostly savory note. I really enjoyed this sandwich but because I have a thing for spicy food I really liked the Pepperbelly Melt.
The Grilled Cheese Truck has a full menu of various grilled cheese sandwiches and based on the two that I tried I am sure their entire menu rocks. To find their next location check out their website, but make sure you mentally prepare yourself to wait in a line.
