The other day my wife came home with some cupcakes from Nothing Bundt Cakes, a little cake shop in The District in Irvine, Ca. They specialize in Bundt cakes but they also have mini bundt cakes (cupcakes) which they call Bundtinis.
Nothing Bundt Cake Cupcakes (Bundtinis) are extremely moist and delicious. I’ve eaten a lot of cupcakes before and so far these are among the best but by far they were the most moist. The only cake that would be more moist would be a Tres Leche cake. Above are the four bundtinis that they offer, starting from the top left and moving clock-wards: red velvet, lemon, chocolate, white chocolate raspberry. My personal favorites were the white chocolate raspberry and the lemon but my wife really enjoyed the red velvet and the chocolate. I really don’t have a lot to say about the Bundtinis other than you have to try them for yourself, but a final stress on how moist they were… I left one of them in the refrigerator for two days and on the third day when I ate it the Bundtinis was still moist on the inside.
