The first time I tried a Date-Nut smoothie was at a natural juice bar in Costa Mesa called Nekter Juice Bar. They have a lot of healthy drinks that I would highly recommend, one of my favorites was called the Toxin Flush (tastes so much better than it sounds… hahaha). When I tried the Date-Nut smoothie I feel in love with it and went home and tried to recreate it. Now I don’t know if I hit the nail on the head, but I think I came real close (I just use more Banana). After making my version I realized why so many people would rather just buy it at Nekter… its not an easy drink to make but it is well worth it. If you aren’t the type to make your own then go to Nekter and at least buy one to try.
The drink doesn’t have a lot of ingredients (Cashew Nuts, Dates, Vanilla Extract, Banana, Nutmeg and water), the hard part is the process of putting it all together. Step one is making the Vanilla Cashew Nut Milk. You need 1 cup of raw Cashew Nuts which you will need to soak in water over night. Strain the Cashew Nuts and place them in a blender, add in 4 pitted Dates (aka seedless), 1 tsp Vanilla Extract and 4 cups of filtered water.
Blend it up well then strain the resulting milk into a pitcher. If you just want to make the Banana Date Nut Smoothie you can just add in all of the ingredients into the blender at one time (next step below) and blend it all together. The reason I separate the Vanilla Cashew Nut Milk step is because you can use this milk as a base to many other drinks (which I will cover later).
Once you have the Vanilla Cashew Nut Milk you will have about 36 oz which is enough to make at least 2 – 4 Date-Nut smoothies depending on how large of a portion you want to make. You will need about half of the milk and one banana, 4 pitted Dates (cut into strips) and a 1/4 tsp of fresh ground Nutmeg. If you like your smoothies on the sweeter side add in another 1/2 tsp of vanilla extract and 2 additional pitted Dates. Blend it up well until the dates are either dissolved or at least chopped up into tiny bits that can go through a straw.
I like to refrigerate mine over night but if you want to drink it cold right away than subtract one cup of filtered water from the Vanilla Cashew Nut Milk and add in one cup of ice when you make the Banana Date Nut Smoothie. Serve cold and enjoy!
