Selecting A Rib Eye Steak

Selecting a good quality steak is pretty easy all you have to look for are a few traits:

  1. Look for meat that is deep red (almost bright red).  The more pale the red the less fresh it is.  The meat should almost look wet (glisten).
  2. Good pieces of rib eye steak have lots of marbleization within the meat (see image below for details).
  3. Look at the expiration date, you always want a steak that was cut either on the same day or at most yesterday (never more than that).
